Hate dieting? Try the Mediterranean Diet - you won’t believe you’re on a diet.
Moroccan Harira Soup is an example of the kinds of meals you’ll enjoy with the Mediterranean diet – the soup is delicious and healthy, and you can enjoy it all the year round.
Ingredients
175 grams of soaked chickpeas
1 chicken carcass [wings seem to work fine] or some lamb bones
A large bunch of coriander and one of flat leaf parsley
2.5 litres of water
125g lentils
1 teaspoon each of ground tumeric, ginger, cumin, black pepper and of sea salt
2 teaspoons of of cinnamon
500g tomatoes [skinned and deseeded preferably]
2 onions, grated [use swimming goggles: they really work!]
2 tbsp plain flour
150ml water
2 lemons; 2 tbsp olive oil
Method:
Drain the chickpeas and put in a big pot with the chicken or lamb and the water.
Set aside 3 chopped tbsp of coriander and of parsley and tie the rest of the bunches together and pop in the pot, cover with the 2.5 litres of water, and simmer 1 hour until the chickpeas are soft.
Remove the chicken carcass or bones and herbs.
Pop in the lentils, spices and salt, simmer 20 minutes covered.
Add tomatoes and grated onions.
Simmer for 30 mins.
Squeeze in the juice of one of the lemons and add with the olive oil and reserved herbs and simmer for a couple of minutes.
