
These muffins are moist and delicious – and good for you too. The recipe makes 12 muffins, and each muffin contains just 150 calories.
Ingredients
2 cups self-raising wholemeal flour
1 cup bran cereal
1 cup skim milk (or buttermilk)
1 teaspoon baking powder
Optional spices to taste (choice of cinnamon or ginger, around a teaspoon)
1 egg
1 tablespoon honey
1.5 cups of crushed pineapple, drained
How to make
Heat the oven to 375 degrees.
Combine the dry ingredients and mix thoroughly. Add the egg and honey to the milk, and beat lightly, then add to the dry ingredients and mix lightly. Stir in the crushed pineapple.
Line a 12-cup muffin pan with paper liners. Use a tablespoon to drop the mixture into the cups, dividing it evenly.
Bake for 20 minutes.
